5 Dishes You Should Know Before Leaving Home

It’s that time of year when your kids, your friends or you are moving away to study or other job opportunities. Whether that be to a whole other country, city or building, mum or dad’s freshly made food is now much further than just a few steps away. To quell the inevitable homesickness that you’ll feel (we promise, you’re not that tough), we recommend learning to cook a few key dishes that can help make the transition a bit easier.

DISCLAIMER: We thought about adding roti to this list but you now can buy and freeze—or if you have an angel of a mother, she will prepare a lifetime supply for when her baby moves out.

1. Pelau

The reason for this is quite simple: It’s a one-pot, filling and nutritious meal. You can eat it for dinner the night of and for lunch the following day. (Trust, it tastes even better when it sits overnight). Plus, it'sw easily customisable. Use brown instead of white rice and skip the orange cooking butter if you’re taking the healthier route; you can choose to cook it vegetarian, or with beef or chicken.

2. Tomato Sauce

Red sauce is one of the most versatile ingredients. You can make a large pot ahead of time and freeze it in portions. Defrost and toss with pasta, top your chicken or make a lasagna, sloppy Joes and even tomato soup! The list is endless and it’s incredibly easy to cook.

3. Omelette

Eggs are a great source of protein especially in preparation for those 3 am parties and 8 am classes. It’s an easy fix if you literally have no idea what to eat for dinner, need a nutritious and filling breakfast before an exam or, let’s face it, when you’re hungover and starving!

4. Stir Fry

Stir fry is the easiest, cheapest and healthiest meal you can possible make. Just saute over high-heat any vegetables and meat that you have on hand with soy sauce, garlic and ginger and dried red pepper chilli flakes (these are just our favourites, you can season up your stir fry any way that you’d like). You can add brown or jasmine rice and vermicelli or egg noodles straight into the stir fry. If you're going vegetarian we recommend adding an egg to your stir fry for extra protein.

5. Curry Any (and Every) Thing

This is not something you can buy— well, maybe you can, but it’ll never be as good as when you make it at home. Even if you’re lucky enough to have a mum who grinds her own curry paste, or you’re used to the clear, plastic bags of curry powder, you should still watch your mum or dad make a (boss!) curried shrimp, chicken, beef, duck or goat. Absorb as much knowledge as possible. Realistically, your go-to may be chicken as it’s the easiest to clean but still watch, learn and prosper. Because you really don’t want to be stuck with a bad curry. Ever.
